Zucchini Relish - cooking recipe

Ingredients
    10 c. squash
    2 large onions
    2 red sweet peppers
    2 green sweet peppers
    3 Tbsp. salt
    2 1/2 c. vinegar
    5 c. sugar
    1 tsp. pepper
    1 tsp. nutmeg
    2 tsp. dry mustard
    2 tsp. celery seed
Preparation
    Grind the squash, onions and peppers.
    Sprinkle with the salt; let set overnight.
    In the morning, rinse well and drain.
    Combine the vinegar, sugar, pepper, nutmeg, dry mustard and celery seed. Add all ingredients in large pan; simmer for 3 minutes.
    Seal hot in jars.
    Makes about 5 pints.
