Mediterranean Pasta Salad - cooking recipe
Ingredients

2 tsp. brown sugar
4 tsp. red wine vinegar
2 (14 oz.) cans Del Monte diced, peeled tomatoes, drained
3 Tbsp. olive oil
1 Tbsp. chopped parsley
1 tsp. basil, crushed
1 clove minced garlic
8 oz. corkscrew pasta, cooked and drained
1 (4 oz.) can sliced olives
3 green onions, sliced
1/2 c. crumbled Feta cheese
salt and pepper
Preparation

Dissolve sugar in vinegar.
Stir in tomatoes, oil, parsley, basil and garlic.
Toss gently with pasta, olives and onions. Cover and chill 2 hours. Before serving, add cheese, salt and pepper.
Makes 6 to 8 servings.
