Fiesta Rice - cooking recipe

Ingredients
    2 c. chopped onion
    1/4 c. butter
    4 c. uncooked long grain rice
    2 (8 oz.) cans pitted ripe olives, drained
    2 (28 oz.) cans tomatoes, with liquid, cut up
    1 c. chopped green pepper
    1 Tbsp. salt
    1 to 2 tsp. chili powder
    1 tsp. dried oregano
    1/2 tsp. pepper
    4 c. water
    3 c. (12 oz.) shredded Cheddar cheese
Preparation
    In skillet over medium heat, saute the onion in butter until tender.
    Transfer to a large bowl.
    Stir in the next 9 ingredients. Divide between two ungreased 13 x 9 x 2-inch baking pans.
    Cover and bake at 350\u00b0 for 1 1/2 hours.
    Uncover.
    Sprinkle with cheese. Return to oven for 5 to 10 minutes or until cheese melts.
