Banana Nut Bread - cooking recipe
Ingredients

2 c. all-purpose flour
3/4 c. sugar
1/2 c. margarine
2 eggs
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 c. (2 medium) mashed ripe bananas
1/4 c. orange juice
1 c. flaked coconut
3/4 c. chopped nuts
Preparation

In large mixing bowl, combine first 7 ingredients.
Beat at low speed, scraping bowl often until well mixed (2 or 3 minutes).
Add bananas and orange juice.
Continue beating until well mixed.
By hand, stir in coconut and nuts.
Spread into three greased 5 1/2 x 3-inch mini pans or one greased 9 x 5-inch loaf pan.
Bake mini loaves at 350\u00b0 for 35 to 40 minutes.
In 9 x 5-inch pan, bake 60 to 65 minutes or until wooden pick comes out clean.
