Zucchini Fritters - cooking recipe

Ingredients
    5 Tbsp. Bisquick
    1/4 tsp. salt
    2 eggs
    2 c. zucchini
    1/2 c. Parmesan cheese
    1/8 tsp. pepper
    2 Tbsp. butter
Preparation
    In a bowl, blend together the Bisquick, Parmesan cheese, salt and pepper. Add 2 eggs.
    Grate the zucchini and add to the mixture, making a batter.
    In a large frypan or pancake griddle, melt 2 tablespoons butter.
    Pour batter into pancake size.
    Fry 3 minutes on each side. Serve while warm.
    Makes 8 to 10 fritters.
