Coriander Date Cookies - cooking recipe

Ingredients
    1 c. shelled pistachios
    2 1/4 c. flour
    1/2 tsp. salt
    4 1/2 tsp. ground coriander
    1/2 lb. (2 sticks) room temperature butter
    1/4 tsp. cinnamon
    1/2 c. brown sugar
    1/2 tsp. grated orange zest
    1 egg
    1/4 tsp. vanilla
    3/4 c. chopped dates
Preparation
    Chop nuts; set half aside.
    Finely chop remaining nuts. Combine flour, salt, coriander and cinnamon.
    Beat butter, sugar and zest until creamy.
    Beat in egg and vanilla.
    Gradually beat in flour mixture.
    Stir in dates and coarsely chopped nuts.
    Chill dough 30 minutes.
    Form into logs about 2 inches in diameter, wrap in plastic and chill until firm but not hard, about 1 hour.
    Roll logs of dough in finely chopped nuts.
    Cut into 1/4-inch slices. Bake at 350\u00b0 for 12 to 15 minutes until edges are golden.
    Makes 54 cookies.
