Lo-Cal Zucchini Quiche - cooking recipe
Ingredients

3 medium zucchini, peeled and grated
1 tsp. salt
1/2 lb. Swiss, Mozzarella or Cheddar cheese, grated
1/2 onion, chopped
3 eggs, beaten
dash of pepper
1/2 tsp. oregano
1/2 tsp. basil
3 Tbsp. grated Parmesan cheese
Preparation

Combine all ingredients, except Parmesan.
Mix well and place in\ta 9-inch pie pan or quiche dish (greased).
Sprinkle with Parmesan.
Bake
at
350\u00b0
for 35 to 40 minutes.
Makes 8 servings with 140 calories each.
Freezes up to 1 month.
