Light Date And Nut Bread - cooking recipe
Ingredients

1 1/2 c. boiling water
1 c. chopped dates
3/4 c. granulated sugar
1 egg, beaten
2 1/4 c. sifted all-purpose flour
1/4 tsp. baking powder
1/2 tsp. salt
2 tsp. baking soda
1 c. chopped walnuts
1 Tbsp. melted shortening
1 tsp. vanilla extract
Preparation

Pour the boiling water over the dates and let stand 10 minutes.
Meanwhile, add the sugar gradually to the egg, while beating with a spoon.
Sift together the flour, baking powder, salt and baking soda and stir the walnuts into them.
Add date mixture alternately with the sifted dry ingredients and nuts to the sugar and egg mixture.
Stir in shortening and vanilla and pour into greased loaf pan, about 10 x 5 x 3-inch.
Bake in moderate oven at 350\u00b0 for 1 hour and 15 minutes or until done.
