Zucchini Bread - cooking recipe

3 eggs
1 c. salad oil
2 1/2 c. sugar
2 c. grated raw, unpeeled zucchini
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 c. unsifted flour
3/4 c. chopped nuts
1 (16 oz.) maraschino cherries, drained
Preparation

In bowl, beat eggs until foamy. Gradually beat in oil and sugar.
Add zucchini, cinnamon, salt, baking soda and baking powder.
Mix well, then gradually blend in flour.
Fold in nuts and cherries.
Pour into 2 greased loaf pans.
Bake at 350\u00b0 for 1 hour and 15 minutes.
