Low-Fat Muffin Surprises - cooking recipe
Ingredients

1 3/4 c. all-purpose flour
1/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 egg
3/4 c. milk
1/3 c. cooking oil
jelly or jam
Preparation

In mixing bowl, stir together flour, sugar, baking powder and salt.
Beat together egg, milk and cooking oil; add all at once to dry ingredients, stirring just until moistened.
Fill greased or paper-lined muffin tin cups 1/3 full.
Place a teaspoon jelly or jam atop batter in muffin tin.
Fill muffin tin cups with remaining batter.
Bake in 400\u00b0 oven for 20 to 25 minutes.
Makes 12 muffins.
