Orange Zucchini Squares - cooking recipe

Ingredients

1 1/2 c. unsifted flour
1 c. sugar
1 tsp. soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 c. nuts
2 egg whites, slightly beaten
1 c. zucchini, grated and drained
1 (6 oz.) can frozen orange juice, undiluted and thawed
4 Tbsp. vegetable oil
1/2 tsp. grated orange peel

Preparation

Mix dry ingredients together.
Stir in nuts and zucchini.
Add orange juice and oil to beaten egg whites.
Fold in dry ingredients; stir in orange peel.
Spoon dough into greased and floured 9 x 13-inch pan.
Bake at 350\u00b0 for 40 to 45 minutes. Cool.
Frost and cut into squares.
