Sugar-Free Carrot Cake - cooking recipe

Ingredients
    1/2 c. Sugar Twin
    4 eggs (can use Egg Beaters)
    1/2 c. corn oil (can use applesauce)
    1 1/2 c. flour (plain)
    1 box sugar-free vanilla pudding
    2 tsp. baking powder
    1 1/2 tsp. baking soda
    1/4 c. water
    1 Tbsp. cinnamon
    1/2 tsp. nutmeg
    1 tsp. lite salt
    3/4 c. pecans, chopped
    2 c. carrots, grated
    15 oz. unsweetened crushed pineapple
Preparation
    Preheat
    oven to 350\u00b0.\tBeat eggs in large mixing bowl. Add sugar, water and oil.
    Sift together dry ingredients.
    Add slowly to\tegg mixture, mixing well.
    Add carrots, pecans and pineapple. Mix
    until\twell
    combined.
    Spray 9 x 13-inch pan with
    vegetable spray.
    Flour lightly.
    Bake approximately 40 minutes.
    Cool. Frost with Sugar-Free Cream Cheese Icing.
