Oregon Bread - cooking recipe

Ingredients
    1/2 pkg. Monterey Jack cheese
    1/2 pkg. Cheddar cheese
    1 bunch scallions
    1/2 to 3/4 c. mayonnaise
    1 loaf French bread, buttered
    2 c. milk
    2 1/2 Tbsp. dry yeast
    1/2 c. shortening
    1/4 c. sugar
    1 tsp. salt
    6 1/2 to 7 c. flour
Preparation
    Combine yeast, shortening, sugar, salt and 3 cups of the flour.
    Heat milk to 120\u00b0 to 130\u00b0.
    Add milk and beat 200 strokes. Stir in as much of the remaining flour as possible.
    Knead 10 minutes on floured surface.
    Place in greased bowl, cover with damp towel and let rise until doubled, 45 minutes to 1 hour.
