Zucchini Boats With Ham And Vegetable Stuffing - cooking recipe

Ingredients
    1 large zucchini
    2 Tbsp. vegetable oil
    1 c. diced onion
    2 large tomatoes, peeled, seeded and diced
    1 clove garlic, minced
    1 tsp. dried tarragon
    1/2 tsp. dried thyme
    1/4 c. minced parsley
    1 1/2 c. diced cooked ham
    1/2 c. bread crumbs
    salt and pepper to taste
Preparation
    Preheat oven to 350\u00b0.
    Cut zucchini lengthwise in half.
    Scoop out inside and leave 1/2-inch thick shell. Save inside and cut into pieces (small).
    Place zucchini, cut side down, in pan large enough to hold it, and fill pan with one-inch deep of hot water. Put in oven and cook until shell softens some (between 5 and 10 minutes).
