Ruby Sauced Beets - cooking recipe

Ingredients
    4 tsp. cornstarch
    2 Tbsp. sugar
    1/4 tsp. salt
    1 1/3 c. cranberry juice cocktail
    3 (16 oz.) cans beets, drained (use either sliced or diced)
    1/2 tsp. grated orange peel (optional)
Preparation
    Blend cornstarch, sugar and salt in a large saucepan. Stir in cranberry juice cocktail. Cook and stir over medium heat until thick and bubbly. Add drained beets and orange peel.
    Heat and serve. Serves 10 to 12.
