Brown Soda Bread - cooking recipe

Ingredients
    4 c. all-purpose flour
    3 c. whole wheat flour
    2 tsp. salt
    1 Tbsp. baking soda
    4 tsp. cream of tartar
    2 tsp. superfine sugar
    4 Tbsp. butter
    up to 3 3/4 c. buttermilk (or skim)
Preparation
    Lightly grease a baking sheet.
    Preheat oven to 375\u00b0.
    Sift all dry ingredients into a large bowl.
    Rub the butter into flour mixture.
    Then add enough buttermilk to make a soft dough.
    Knead lightly until smooth and transfer to the baking sheet.
    Shape into a large round about 2 inches thick.
    Using a floured handle of a wooden spoon, form a large cross on top.
    Bake for 40 to 50 minutes at 375\u00b0 until risen and firm.
    Cool for 5 minutes before transferring to wire rack to cool.
    Makes one 2-pound loaf.
