Zucchini Relish - cooking recipe

Ingredients
    10 c. ground zucchini
    4 c. ground onions
    5 Tbsp. salt
    2 1/4 c. vinegar
    2 1/2 tsp. sugar
    1 tsp. nutmeg
    1 tsp. dry mustard
    1 tsp. turmeric
    2 tsp. celery seed
    1 Tbsp. cornstarch
    1 red pepper, chopped fine
    1 green pepper, chopped fine
Preparation
    Combine zucchini, onions and salt; let stand overnight.
    Next morning, drain and rinse in cold water.
    Combine with remaining ingredients; cook for 30 minutes.
    Pour into sterilized jars; seal and process 10 minutes.
    Makes 7 pints.
