Zucchini Quiche - cooking recipe

Ingredients
    1 pie crust
    1/4 c. parsley, chopped
    2 cloves garlic, chopped
    1/2 c. bread crumbs
    1 lb. thinly sliced zucchini
    4 eggs, lightly beaten
    2 Tbsp. oil
    3/4 c. shredded Mozzarella cheese
    1 1/2 c. Coffee Rich
    1/2 tsp. salt
    dash of pepper
    1/4 c. grated Parmesan cheese
    1/4 c. onion, chopped fine
Preparation
    Saute zucchini, onion and garlic in oil until lightly browned. Season with salt and pepper.
    Place in pie shell.
    Top with cheese and bread crumbs.
    Combine eggs with cream and pour on top of zucchini mixture.
    Sprinkle top with Parmesan and parsley.
    Bake at 400\u00b0 for 25 minutes.
    Cool slightly and serve.
