Ingredients

1 c. shortening
1 c. powdered sugar
1 c. granulated sugar
2 eggs
1 c. salad oil
2 tsp. vanilla
1 tsp. lemon zest
4 1/4 c. flour
1 tsp. baking powder
1 tsp. cream of tartar
1 tsp. salt
Preparation

Cream the shortening and sugars.
Add eggs one at a time.
Beat well after each until light and fluffy.
Add oil, vanilla and lemon zest and beat until mixed well.
Sift the four dry ingredients. Gradually add sifted ingredients to creamed mixture and beat until well blended.
Chill.
On greased cookie sheet, form heaping teaspoonfuls into ball.
Flatten with fork or use cookie press. Bake for 10 minutes at 325\u00b0 to 350\u00b0.
