Irish Soda Bread - cooking recipe

2 c. flour
1 1/2 tsp. baking powder
3/4 tsp. baking soda
1 tsp. salt
3 Tbsp. sugar
3 Tbsp. solid white shortening
1 c. buttermilk
2/3 c. raisins
1 1/2 tsp. caraway seed (optional)
melted butter (for topping)
sugar (for topping)
Preparation

In bowl, sift flour, baking powder, baking soda, salt and sugar.
(If using seed, add now.)
Cut in shortening with pastry cutter or two knives.
Pour in buttermilk; add raisins.
Mix; batter will be very moist.
Turn out onto floured board and knead gently a few strokes.
Shape into round shape.
Cut loaf into quarters, about 1/4 way.
Brush with melted butter.
Sprinkle with sugar; bake at 350\u00b0 for 30 to 45 minutes or until light brown.
