Lemonade Cookies - cooking recipe

Ingredients
    2 sticks soft butter
    3/4 c. sugar
    1 1/4 c. sweetened lemonade powdered mix, divided
    1 tsp. vanilla
    1 egg
    1/2 tsp. lemon extract or 1 tsp. grated lemon rind
    2 3/4 c. flour
    1 tsp. baking soda
Preparation
    In a large bowl, cream butter, sugar and 3/4 cup lemonade; mix until fluffy. Beat in egg, vanilla and lemon. In separate bowl, stir together flour and baking soda. Add dry ingredients to butter mixture, beating until thoroughly combined. Place the remaining 1/2 cup of lemonade mix in shallow dish. Form dough into 1-inch balls and roll them in lemonade mix, then place them 2-inches apart on a well-greased cookie sheet. Bake cookies until edges just begin to brown, about 10 to 12 minutes. Cool 2 minutes on baking sheet before removing to a rack. Makes about 5 dozen.
