Zucchini Rounds - cooking recipe

Ingredients
    1/3 c. biscuit mix
    1/4 c. grated Parmesan cheese
    1/8 tsp. pepper
    1/8 tsp. salt
    2 slightly beaten eggs
    2 c. shredded zucchini
    2 Tbsp. butter or margarine
Preparation
    In mixing bowl, stir together the first 5 ingredients until the mixture is moist.
    Fold in zucchini.
    Heat butter in a skillet over medium heat.
    Use 2 tablespoons of mixture for each round. Cook 2 to 3 minutes on each side or until brown.
    Makes 12 rounds or 6 servings.
