Zucchini Bread Ring - cooking recipe

1 1/2 c. grated zucchini
1 1/2 c. rolled oats
1 1/2 c. whole wheat flour
2 tsp. baking soda
2 tsp. cream of tartar
2 tsp. cinnamon
1/4 tsp. ground nutmeg
1/2 tsp. ground allspice
1/2 c. honey
1 tsp. vanilla
1/3 c. frozen pineapple juice concentrate, thawed
3/4 c. unsweetened applesauce
1 (8 oz.) can juice-packed crushed pineapple, drained
2 egg whites (unbeaten)
1/2 c. raisins
Preparation

Preheat oven to 325\u00b0.
Set grated zucchini between paper towels and press to remove excess moisture.
In medium bowl, combine oats with flour, baking soda, cream of tartar, cinnamon, nutmeg and allspice; mix well.
In separate bowl, combine honey, pineapple juice concentrate, vanilla, applesauce and crushed pineapple; stir into flour mixture.
Gently mix in egg whites. Stir in raisins and well drained, grated zucchini.
