Low-Fat Lemon-Apricot Soda Bread - cooking recipe

2 3/4 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/4 c. sugar
1/4 tsp. nutmeg
1 1/2 c. nonfat buttermilk
1/2 c. chopped dried apricots
1/4 c. margarine, melted
1 egg, lightly beaten
1 tsp. grated lemon rind
vegetable cooking spray
Preparation

Combine first 6 ingredients; make a well in center of mixture. Combine buttermilk, apricots, margarine, egg and lemon rind.
Add to dry ingredients, stirring just until dry ingredients are moistened.
Spoon batter into an 8 1/2 x 4 1/2 x 3-inch loaf pan coated with cooking spray.
Bake at 350\u00b0 for 45 to 50 minutes or until a toothpick inserted in center comes out clean.
Let cool in pan 10 minutes; remove from pan.
