Trachok'S Zucchini Bread - cooking recipe
Ingredients

3 eggs, well beaten
2 c. sugar
3 tsp. vanilla
1 c. oil
2 c. shredded zucchini (about 2 medium size)
3 c. flour
1/4 tsp. salt
3 tsp. cinnamon
1 tsp. soda
1 c. chopped nuts
1 c. raisins (optional, but recommended)
Preparation

Preheat oven to 375\u00b0.
Grease and flour 2 loaf pans.
Beat eggs until light and fluffy.
Add sugar, oil and vanilla, blending well. Stir in zucchini.
Sift all dry ingredients together.
Blend with creamed mixture.
Fold in nuts and raisins.
Turn into 2 floured and greased pans.
Bake at 375\u00b0 for 15 minutes, then at 350\u00b0 for 45 minutes or until done.
Cool on racks.
Makes 2 loaves.
