11 oz. blanched whole almonds (2 generous c.)
1 c. plus 3 Tbsp. sugar
4 egg whites
pinch of salt
1/2 tsp. vanilla
Preparation

Preheat oven to 300\u00b0.
Generously butter 2 cookie sheets.
In food processor, pulse the almonds with the sugar until finely ground.
In large bowl, beat the egg whites with salt until they form stiff peaks.
Fold in the almond mixture and vanilla with rubber spatula.
Spoon scant tablespoons of dough about 1 1/2 inches apart onto cookie sheets.
Bake in middle oven about 30 minutes until golden.
Let rest one minute, then transfer to rack to cool.
