Ingredients

2 c. sifted flour
1 tsp. baking powder
1 tsp. soda
1 tsp. salt
1 c. shortening, softened
1 c. white sugar
1 c. brown sugar
3 eggs
2 Tbsp. water
2 tsp. vanilla
3 c. oats (uncooked)
1 1/2 c. coconut
Preparation

Sift together flour, baking powder, soda and salt into a bowl. Add shortening, sugars, eggs, water and vanilla.
Beat until smooth, about 2 minutes.
Fold in rolled oats and coconut.
Shape dough into small balls; place on greased baking sheet.
Bake at 325\u00b0 for 12 to 15 minutes.
Makes 7 dozen cookies.
