Banana Pineapple Loaf - cooking recipe
Ingredients

1 c. margarine, softened
2 c. sugar
4 eggs
1 c. mashed ripe banana
4 c. sifted flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 (15 1/2 oz.) can crushed pineapple (undrained)
1 c. coconut (optional)
1 c. chopped pecans
Preparation

Cream margarine and sugar.
Add eggs and mix well.
Stir in bananas.
Sift together flour, baking powder, soda, salt and add to butter mixture.
Fold in pineapple, coconut and pecans.
Pour into 2 greased loaf pans.
Bake at 350\u00b0 for 1 hour and 10 minutes. Test with toothpick for doneness.
Wonderful sliced, buttered and toasted for breakfast.
For lunch, spread cream cheese on slices and serve as a little sandwich.
