Doctor Bird Cake - cooking recipe

3 c. sifted flour
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
1 tsp. salt
2 c. diced bananas
1 c. cooking oil
3 eggs
1 (8 oz.) can crushed pineapple with juice
1 1/2 tsp. vanilla
Preparation

Measure flour, baking soda, cinnamon, sugar and salt and sift together. Dice bananas and measure 2 cups. Add bananas to dry ingredients, along with oil, pineapple with juice, vanilla and eggs. Stir to blend mixture; do not beat. Pour into a greased 9-inch tube pan or Bundt pan. Bake at 350\u00b0 for 1 hour and 20 minutes. Set aside to cool on a rack without removing from pan.
