Ingredients

3/4 c. reduced-calorie tub margarine
1/4 c. plus 2 Tbsp. frozen pineapple juice concentrate, thawed
1 tsp. granulated sugar
1 tsp. vanilla extract
1 egg (room temperature)
1 1/2 c. plus 3 Tbsp. flour
1/2 tsp. salt
1/4 tsp. baking soda
3/4 c. currants or dark raisins
3 oz. semi-sweet chocolate chips
Preparation

Preheat oven to 350\u00b0.
Lightly spray large cookie sheet with nonstick cooking spray.
In large bowl, beat together margarine, pineapple juice concentrate, sugar and vanilla until light and fluffy.
Beat in egg until light and smooth.
In separate bowl, mix flour, salt and baking soda.
Add to margarine mixture in 3 parts, beating until incorporated after each addition.
Stir in currants and chocolate chips.
