Zucchini-Cashew Quiche - cooking recipe
Ingredients

1 (9-inch) pie shell
3/4 c. cashews
3 medium zucchini
3 Tbsp. butter
1/4 tsp. salt
1/8 tsp. pepper
4 oz. Monterey Jack cheese, grated
2 eggs
1 c. milk
Preparation

Heat oven to 325\u00b0.
Prepare pie shell. Do not prebake. Sprinkle cashews in pie shell.
Slice zucchini and saute in melted butter until crisp-tender.
Add salt and pepper.
Layer on top of cashews.
