Pine Nut Macaroon Cookies - cooking recipe

Ingredients
    1 c. (4 oz.) pine nuts
    1 c. (8 oz.) almond paste, cut in small pieces
    2/3 c. granulated sugar
    2 egg whites
    1 tsp. grated lemon peel
Preparation
    Heat oven to 325\u00b0.
    Line a cookie sheet with foil.
    Beat almond paste, sugar, egg whites and lemon peel until smooth.
    With wet hands, form dough into 1-inch balls.
    Press balls flat (half dollar size) into pine nuts.
    Place 1 inch apart on cookie sheet. Bake 20 to 25 minutes or until golden brown in oven at 325\u00b0. Yields 3 to 4 dozen.
