Zucchini Relish - cooking recipe

Ingredients
    12 c. ground zucchini
    4 red peppers or carrots chopped
    5 Tbsp. salt
    4 c. sugar
    2 1/2 c. vinegar
    3/4 tsp. nutmeg
    1/2 tsp. black pepper
    1 Tbsp. dry mustard
    2 1/4 tsp. corn starch
    1 1/2 tsp. celery seed
    1 hot pepper (optional)
Preparation
    Mix together zucchini, peppers or carrots and salt. Set aside for several hours; then rinse in cold water. Mix together in a large pot the following: sugar, vinegar, nutmeg, black pepper, dry mustard, corn starch, and celery seed. Simmer until very hot and pour over zucchini; seal in jars.
