Matt'S Favorite Banana Bread - cooking recipe

2 1/2 c. flour
1 tsp. salt
2 tsp. baking soda
1 c. vegetable shortening
2 c. sugar
2 c. mashed very ripe bananas (about 6 medium bananas)
4 eggs, slightly beaten
1 c. chopped walnuts
Preparation

Heat oven to 350\u00b0.
Grease and flour 9 x 5 x 3-inch loaf pan. Stir and toss together the flour, salt and baking soda.
In a large bowl, mix the shortening, sugar, mashed banana, eggs and walnuts.
Add the combined dry ingredients and stir just until the batter is blended.
Pour into prepared pan and bake for 65 to 70 minutes.
Remove from oven and let cool in pan for 5 minutes, then turn out onto a rack to cool completely.
