Ingredients

1 c. butter or margarine
1 c. confectioners sugar
1 c. granulated sugar
2 eggs
1 c. salad oil
2 tsp. vanilla extract
1 tsp. grated lemon peel
4 1/4 c. unsifted all-purpose flour
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp. salt
colored sugar by decoration
Preparation

In large mixer bowl with mixer at medium speed, cream butter and sugar.
Beat in eggs one at a time until light and fluffy. Add oil, vanilla and lemon peel.
In another large bowl, combine flour, soda, cream of tartar and salt.
Gradually add the dry ingredients to creamed mixture.
Heat until well blended.
Cover and chill dough for several hours.
Preheat oven to 325\u00b0.
Grease cookie sheets.
Divide dough into thirds.
Form heaping teaspoon of dough into a ball.
Place on cookie sheet.
Flatten dough to a 2-inch diameter with the bottom of a glass dipped in granulated sugar.
Sprinkle with colored sugar.
Bake 8 to 10 minutes.
Let stand on cookie sheet for 2 to 3 minutes.
Makes about 7 dozen cookies.
