Ingredients

1 c. flour
1 1/2 tsp. cinnamon
1 tsp. baking powder
3/4 tsp. salt
1 c. butter or margarine
1 c. firmly packed brown sugar
1 egg
1 tsp. vanilla
2 3/4 c. uncooked old fashioned oats (Quaker oat cereal)
2 c. shredded carrots
1 c. chopped nuts
Preparation

Heat oven to 350\u00b0.
Grease cookie sheet. In small bowl, combine flour, cinnamon, baking powder and salt.
In large bowl, beat together butter and sugar until light and fluffy.
Blend in egg and vanilla.
Add dry ingredients; mix well.
Stir in oats, carrots and nuts.
Drop by rounded tablespoonfuls onto prepared cookie sheet.
Bake 15 to 17 minutes.
Cool.
Store in loosely covered container.
Makes about 5 dozen cookies.
