Cheesy Zucchini Fritters - cooking recipe

Ingredients
    1 1/2 c. all-purpose flour
    2 tsp. baking powder
    1/2 tsp. salt
    1 c. chopped zucchini
    1/2 c. (2 oz.) shreeded Cheddar cheese
    1/4 c. finely chopped onion
    1 egg, beaten
    1 c. milk
    Vegetable oil
Preparation
    Combine flour, baking powder, and salt in a large mixing bowl. Stir in zucchini, cheese, and onion; set mixture aside. Combine egg and milk; add to flour mixture, stirring just until moistened. Carefully drop batter by rounded tablespoonfuls into 1 inch hot oil (375\u00b0).
    Cook only a few at a time, turning once. Fry 2 to 3 minutes or until fritters are golden brown.
    Drain well on paper towels.
    Yield:
    about 2 dozen.
