Spinach Spoon Bread - cooking recipe

Ingredients
    1 (9 to 10 oz.) pkg. frozen onions in cream sauce
    1 (10 oz.) pkg. frozen chopped spinach
    2 slightly beaten eggs
    1 c. sour cream
    1/2 c. butter, melted
    1/4 tsp. salt
    1 (8 1/2 oz.) pkg. corn muffin mix
    1/2 c. shredded Cheddar or Swiss cheese
Preparation
    Prepare onions according to package.
    Set aside.
    Cook spinach. Drain well.
    In large bowl, mix onions, eggs, spinach, sour cream, butter and salt.
    Stir in corn muffin mix.
    Pour mixture into greased 1 1/2-quart casserole.
    Bake at 350\u00b0 for 30 to 35 minutes or until toothpick comes out clean.
    Sprinkle top of cornbread with cheese and bake 2 more minutes until cheese is melted.
    Serve warm.
    Makes 8 servings.
