Zucchini Relish - cooking recipe

Ingredients
    12 c. zucchini squash
    5 Tbsp. salt
    6 c. sugar
    1 Tbsp. dry mustard
    3/4 tsp. nutmeg
    3 to 4 Tbsp. cornstarch
    4 onions
    2 1/2 c. vinegar
    3/4 tsp. turmeric
    1 1/2 tsp. celery seed
    1/2 tsp. black pepper
    2 bell peppers (1 red, 1 green)
Preparation
    Grate or chop 12
    cups zucchini, onions and peppers and mix. Add salt and let
    stand
    10
    hours
    or overnight.
    Rinse well with water then
    drain
    well.
    Mix
    other
    ingredients in large kettle and cook until it starts to thicken.
