Zucchini Bread - cooking recipe

Ingredients
    1 c. oil
    1 c. brown sugar
    1 c. white sugar
    3 eggs
    2 c. grated zucchini (raw, unpeeled)
    2 1/2 c. flour
    2 tsp. baking powder
    1 tsp. salt
    1 tsp. soda
    3 tsp. cinnamon
    3 tsp. vanilla
    1 c. chopped nuts (optional)
Preparation
    Blend oil, sugar and eggs.
    Add flour with soda, baking powder, salt, cinnamon and vanilla.
    Fold in zucchini and nuts. Mix well, but do not beat.
    Bake in 2 or 3 loaf pans at 325\u00b0 for 1 hour.
