Zucchini Bread - cooking recipe
Ingredients

1 c. oil
2 c. sugar
3 eggs
2 c. shredded raw zucchini
3 c. plain flour
3 level tsp. ground cinnamon
1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. soda
chopped pecans (if desired)
Preparation

Blend oil and sugar; beat in eggs, one at a time.
Add shredded zucchini.
Mix flour, salt, cinnamon, soda and baking powder together.
Add to the first mixture.
Pour into 2 greased and floured 8 1/2 x 4 1/2-inch loaf pans.
Bake at 325\u00b0 for 1 hour or until done.
Freezes well.
