Deep Fried Zucchini - cooking recipe

Ingredients
    3 medium zucchini squash
    2 eggs, beaten
    1 c. cracker meal
    1 c. flour
    1/2 tsp. salt
    cooking oil
Preparation
    Wash zucchini well and slice in thin pieces (1/8-inch) diagonally.
    Line a cookie sheet with waxed paper or paper towels and get all the slices ready to fry at one time.
    In 3 shallow bowls, place in one the flour to which the salt has been added and mixed well, in one the beaten eggs and in one the cracker meal. Place on cookie sheet.
    When all is ready, heat at least 2 inches of cooking oil in a deep, heavy pot (I use a small one) or a deep fryer.
    Drop a few zucchini slices at a time in hot oil and fry until brown, turning once.
    Drain on paper towels.
