Zucchini Bread - cooking recipe
Ingredients

3 large eggs
3/4 c. sugar
1 c. vegetable oil
2 c. raw, peeled grated zucchini
1 Tbsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking powder
3 tsp. cinnamon
1 c. coarsely chopped nuts
Preparation

Preheat oven to 350\u00b0.
Combine in mixing bowl and mix well eggs, sugar, oil, zucchini and vanilla.
Sift together flour, salt, baking powder and cinnamon.
Add to zucchini mixture and stir until blended.
Add nuts.
Pour into 2 greased pans (8-inch bread pans).
Bake 1 hour.
Remove from pans and cool on rack. Makes 2 loaves.
