Zucchini Bread - cooking recipe

Ingredients
    2 c. sugar
    1 c. salad oil
    3 eggs
    2 c. grated zucchini, unpeeled
    3 1/2 c. flour
    2 tsp. baking soda
    1/2 tsp. salt
    1/2 tsp. nutmeg
    1/2 tsp. cinnamon
    1/2 tsp. vanilla or almond extract
    1 c. chopped walnuts
    2 c. raisins
Preparation
    Mix sugar and oil.
    Beat in eggs, zucchini and extract.
    Add dry ingredients.
    Add raisins and nuts.
    Place in 2 greased and floured bread pans.
    Bake in 350\u00b0 oven for 45 to 60 minutes.
    Test for doneness.
    Makes 2 loaves.
