Zucchini Bread - cooking recipe
Ingredients

1 c. vegetable oil
2 c. sugar
2 c. grated zucchini
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
3 tsp. cinnamon
1 c. chopped walnuts (optional)
Preparation

Beat together the eggs, oil and sugar.
Mix in the rest of the ingredients in order.
Better if you sift the dry ingredients together before adding.
Fold in the zucchini and walnuts last. Grease and flour 2 loaf pans.
Pour in mixed bread.
Bake at 325\u00b0 for 1 hour or until a toothpick inserted comes out clean.
Cool in pans for about 5 minutes, then turn out and finish cooling.
Wrap in foil to store.
Freezes well.
