Blueberry Orange Bread - cooking recipe
Ingredients

2 Tbsp. butter
1/4 c. boiling water
1/2 c. plus 2 Tbsp. orange juice
4 tsp. grated orange rind
1 egg
1 c. sugar
2 c. sifted flour
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1 c. blueberries (fresh or frozen)
2 Tbsp. honey
Preparation

Melt butter in boiling water in small bowl.
Add 1/2 cup orange juice and 3 teaspoons orange rind.
Beat egg with sugar until light and fluffy.
Add sifted dry ingredients alternately with orange liquid, beating until smooth.
Fold in blueberries. Place in greased 1 1/2-quart 9 x 5 x 3-inch loaf pan.
Bake at 325\u00b0 for 1 hour and 10 minutes.
Turn onto rack.
