Barb'S Zucchini Relish - cooking recipe

Ingredients
    gal. sliced zucchini
    1/4 c. salt
    4 large onions, sliced
    2 large green peppers, sliced thin
    1 large red pepper, sliced thin
    3 c. white vinegar
    3 c. white sugar
    1 1/2 tsp. turmeric
    1/2 tsp. seed
    2 tsp. mustard seed
    1/2 to 1 tsp. alum
Preparation
    In a very large bowl, pour salt over all vegetables and mix well; let stand at least 3 hours.
    Stir occasionally and after at least 3 hours, rinse well.
    In a large pot, cook together almost to a boil the vinegar, sugar and spices.
    When almost boiling, add vegetable slices and once again, bring almost to boil.
    Pour into prepared, sterilized jars.
