Zucchini Elegante - cooking recipe

Ingredients
    6 medium zucchini
    1/4 thinly sliced onion
    4 Tbsp. olive oil
    2 Tbsp. chopped parsley
    2 ripe tomatoes, peeled and thinly sliced
    salt and pepper
    Parmesan cheese
    American cheese, grated
Preparation
    Wash and slice zucchini about 1/2-inch thick.
    Cook in boiling, salted water, covered, until tender.
    Saute onion in oil until yellow.
    Add parsley and remove from heat.
    Drain zucchini. Place in casserole in layers with tomatoes and the oil and onion mixture.
    Sprinkle with salt and pepper.
    Top with grated cheese and Parmesan cheese.
    Bake at 375\u00b0 for 30 minutes.
    Serves 6.
