Chicken Salad(Serves 4) - cooking recipe

Ingredients
    nonstick cooking spray
    2 c. shredded boneless chicken, trim fat off (about 4 half breasts)
    1/2 c. pineapple chunks (unsweetened)
    1/2 c. celery, chopped
    1/4 c. scallions, chopped
    2 Tbsp. dry roasted peanuts
    1/4 tsp. salt
    1 Tbsp. chutney
    1 Tbsp. lemon juice
    1 tsp. lemon rind
    1/3 c. salad dressing or mayonnaise
Preparation
    Coat nonstick pan with cooking spray.
    Arrange chicken in single layer in pan.
    Cook covered on medium heat until cooked through, about 7 minutes, turning once.
    Let cool.
    Combine all ingredients.
    Mix well and refrigerate.
