Zucchini Vegetable Pie - cooking recipe

Ingredients
    22 SnackWell's fat-free wheat crackers
    1/4 c. shredded reduced-fat Swiss cheese
    1 c. sliced mushrooms
    1 c. shredded zucchini
    1/3 c. chopped red or green pepper
    1/3 c. chopped scallions
    2 cloves garlic, minced
    2 tsp. margarine
    1 1/2 c. Egg Beaters
    1 c. skim milk
    1 tsp. dried oregano leaves
    1/4 tsp. coarsely ground black pepper
    1/8 tsp. liquid hot pepper seasoning
Preparation
    Line bottom of greased 9-inch pie plate with 10 crackers. Stand remaining crackers around edge.
    Sprinkle bottom with cheese.
    In skillet, saute mushrooms, zucchini, pepper, scallions and garlic in margarine until tender.
    Spread vegetable in plate. Combine remaining ingredients; pour over vegetable mixture.
    Bake at 375\u00b0 for 30 to 35 minutes or until set.
    Tent crackers along edge with foil to prevent overbrowning.
    Makes 6 servings.
